Is it legal to alter your produce before buying it, such as taking the grapes of stems because you don't want to buy the stems?

Unless you buy the product you would be having no legal rights to alter it as it belongs to the store. One way is to ask them to remove the stems before selling to you , if they are good they will certainly do it.

That actually depends on how the fruit is displayed. For example if there is a big tray filled with grapes and you pay per pound then you could fill the plastic bag as you wish.
